Healthier Sloppy Joes





This had a really nice flavor, and no one complained about the mushrooms, green peppers and onions. They didn't even seem to notice! Everyone around here loves sloppy joes, so I thought it would be nice to have a recipe that includes some healthy veggies. 


Healthier Sloppy Joes
adapted slightly from Fit4Life

1 lb ground beef or turkey
1 large onion, diced
1/2 green pepper, finely diced
5 plum or roma tomatoes, diced
2 T. flour
1/2 c. water
1/4 c. cider vinegar
1/4 c. BBQ sauce
1/4 c. ketchup
8 burger buns, toasted if desired

1. Crumble meat into a large skillet, cook over medium heat until it starts to sizzle, about one minute. Add onion and mushrooms and cook, stirring occasionally, breaking up the meat with a spoon, until the veggies are soft and the moisture has evaporated, 8 to 10 minutes.

2. Add tomatoes and flour, stir to combine. Stir in water, vinegar, BBQ sauce and ketchup and bring to a simmer, stirring often. Reduce heat to a low simmer and cook, stirring occasionally, until the sauce is thickened and the onion is very tender, 8 to 10 minutes. Serve on buns. YUM!
